Hot smoking is a great way to add flavour to foods and is usually done at temperatures of between 220°F - 220°F, people in the know, refer to this method of outdoor cooking as "Low and Slow". The Americans call it barbecue (what is generally known as bbq in Europe, they call "Grilling"). The great advatage with this method of cooking is that it's easy to do and because you're cooking indirectly (not directly over the fire) and at lower temperatures, it's possible to get succulent results as all the moisture is retained in the meat.
